Instructions

Freeze the mozzarella balls for 20 minutes to firm up.

Set up a dredging station with flour, whisked eggs, and a mix of panko bread crumbs plus Italian seasoning.

Dip the cheese into flour, shaking off excess.

Dip the cheese into the egg, coating evenly.

Roll the cheese into panko. Repeat egg and panko for a thick crust.

Place back onto the plate and freeze for 10 minutes.

Pour vegetable oil into a deep saucepan or Dutch oven, about 1 inch high, and warm on medium-high heat.

Check the oil readiness by dropping in a small piece of panko; if it bubbles, the oil is ready.

Fry a few mozzarella bites at a time in the hot oil for 2 minutes, turning until golden brown.

Remove from oil and place on paper towels to soak up excess grease.

Sprinkle with kosher salt while hot.
