Brioche French Toast Cups

1: Preheat oven to 350°F and spray a muffin tin with nonstick baking spray.

2: Slice each piece of brioche bread into bite-size squares (4 vertical cuts and 3 horizontal cuts per slice).

3: In a large bowl, whisk together the eggs, buttermilk, melted butter, sugar, vanilla, salt, and 1 tsp cinnamon until smooth.

4: Add the brioche pieces to the batter and quickly toss until soaked through.

5: Slightly overfill each muffin tin cup with the soaked brioche bread; it's okay if there's a small amount of liquid left over.

6: Mix together the 2 Tbsp of sugar and 1/4 tsp of cinnamon and sprinkle over the brioche cups.

7: Bake at 350°F for 18-20 minutes until set.

8: Let cool in the pan on a wire rack and use a sharp knife to slice away the cups from the muffin tin and remove.

9: Sprinkle with powdered sugar and drizzle with maple syrup.
