A rich and flavorful homemade chicken bone broth that comes together in less than 90 minutes and is packed with good-for-you ingredients. It's great for fall and winter months and can be made in advance and stored in the fridge.
In a 6 quart dutch oven, add the chicken breasts.
Season chicken well with salt and pepper.
Add in the carrots, celery, onion, garlic, rosemary, and thyme.
Fill the dutch oven 3/4 of the way up with cold water.
Bring it up to a boil, and then reduce to simmer COVERED for 75-90 minutes.
Remove the chicken breasts from the broth and set aside to remove the bones and shred.
Take out all of the veggies and toss them or use them for compost.
Strain the broth over a strainer into a large bowl so that any hunks of veggie/herbs are removed.
If using it right away for soup, keep the bowl of broth set to the side and prepare chicken noodle soup in the same pot.
If saving for another day, let the broth cool completely and freeze in a freezer safe bag(s) or container.
For Slow Cooker: Follow all the steps above in a slow cooker - Cook on high for 5 hours or low for 8.
