Funfetti Irish Soda Bread

1: Preheat the oven to 425° and line a dutch oven with parchment paper.

2: In a mixing bowl, whisk together the flour, baking soda, and salt.

3: Grate in the cold butter and cut it into the flour using two forks or a pastry cutter until just barely combined.

4: Pour in the buttermilk and stir until the dough comes together; add a tablespoon of buttermilk if it's too dry.

5: Stir in the sprinkles.

6: Pour the dough out onto a floured surface, knead a few times to bring it together, and shape it into a circular loaf.

7: Use a sharp knife to cut an 'x' into the top of the dough.

8: Place the bread into the parchment-lined dutch oven and bake uncovered for 45-50 minutes until golden brown and cooked through.

9: Sprinkle with flaked sea salt, let cool slightly, then slice and enjoy!
