Delicious savory Ham + Cheese Brioche Brunch Cups made with a variety of ingredients including brioche bread, buttermilk, eggs, and more. Perfect for a Spring brunch, these cups are easy to prepare and can be made ahead of time for convenience.
Preheat the oven to 375°. Spray a nonstick muffin tin with nonstick spray or grease with butter.
Slice the brioche bread into bite-size squares by making 4 vertical cuts and 3 horizontal cuts to create 12 squares.
In a large mixing bowl, add the eggs, buttermilk, melted butter, garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper.
Add in the cubed brioche bread, diced ham, spinach, and 3/4 of the shredded cheese, then use your hands to toss everything together and evenly combine the ingredients.
Overfill each muffin cup into a mound with the ham and cheese brioche mixture.
Sprinkle the remaining shredded cheese on top of each brioche cup.
Bake at 375° for 35 - 40 minutes, or until the cups are golden and the egg has set.
Poke a knife into the center to ensure they are set.
Best served warm! If preparing the day before, let them cool completely in the muffin tin, cover with foil, and store in the fridge.
When ready to serve, slide the foiled muffin tin into the oven set to 350°. Let it preheat and give an additional 10 minutes after the oven hits 350°.
