A no-bake alternative to Girl Scout Samoas made with dates, coconut, and dark chocolate. These healthier cookies capture the caramel flavor and are easy to prepare. A delightful treat that stays soft and chewy when stored in the freezer.
In a food processor, add soaked dates, reserved water, shredded coconut, and vanilla; pulse until finely ground.
Scoop and roll out 1 1/2 Tbsp of the mixture into balls and place on a parchment paper lined baking sheet.
Flatten each ball slightly and poke a hole into the middle to resemble the classic Samoa shape.
Pop tray into the freezer for 20 minutes for cookies to set.
Melt dark chocolate chips and dip the bottom of each cookie into the chocolate, then drizzle remaining chocolate on top.
Finish with a sprinkling of Maldon salt.
