A nutritious and filling dinner made in just 30 minutes featuring ground pork and sweet potatoes. This dish is customizable with a variety of toppings, making it a perfect weeknight meal for the family.
In a heavy bottom 12 inch skillet on medium-high heat, add the sesame oil and ground pork. Season the pork with salt, pepper, garlic powder, onion powder, and ginger. Break up the pork into a crumble as it cooks and allow it to brown.
Once the pork has browned, add in the diced onion and allow the onion to soften and the pork to cook all the way through.
Pour the coconut aminos, sriracha, and vinegar over the pork and onion mixture and turn the heat down to medium.
Add the cole slaw mix, green onion, and water chestnuts, stir everything together and allow this to simmer until the cole slaw has softened (about 5 - 10 minutes).
Once your pork egg roll mixture is done, assemble your bowls starting with a base of roasted sweet potatoes, pile on the pork egg roll mixture, and then top with favorite fixings such as green onion, sesame seeds, or pickled red onion.
