A delicious twist on traditional sloppy joes, this version uses ground turkey and a flavorful sauce made with tomatoes, mustard, and spices. Perfect for serving on sandwiches or in bowls with roasted sweet potatoes.
In a 6-quart dutch oven, add the onion, peppers, and garlic with avocado oil, salt, and pepper. Sauté until tender.
Remove the veggies from the pan and set them aside in a bowl.
Add the ground turkey to the pot over medium-high heat, along with paprika, garlic powder, onion powder, salt, and pepper. Add more avocado oil and chop the meat to make it finer.
Once the meat is browned, add the veggies back in, stir well, and cook the meat all the way through.
Make the sauce by mixing together the ketchup, water, crushed tomatoes, dijon mustard, honey, Worcestershire sauce, vinegar, and brown sugar.
Pour the sauce over the meat, stir well, and add the bay leaves, with a pinch of salt and pepper.
Let this simmer for one hour over low heat with the lid on, stirring frequently, or transfer to a slow cooker on low for 2-3 hours.
Enjoy on sourdough buns or bowl style with roasted sweet potatoes, pickled red onion, avocado, shredded cheddar, and any fixings.
