Delicious Snickerdoodle Cupcake Cookies that are sure to impress Santa. These cookies feature a soft and fluffy consistency from butter and sugar, enhanced by the cinnamon sugar coating and topped with creamy vanilla frosting. Perfect for holiday gatherings!
In a stand mixer or a bowl with a handheld mixer, mix together the butter and sugar until light and fluffy (3-5 minutes).
Add in the vanilla and eggs one at a time, mixing each egg in fully before adding the next.
Pour in the flour, baking soda, baking powder, cinnamon, and salt and carefully mix together just until the flour is absorbed and cookie dough forms.
Place the dough into the refrigerator for 1 hour.
When ready to bake, preheat the oven to 350°F and line two baking sheets with parchment paper.
Scoop 1.5 small cookie scoops worth of dough (2 Tbsp) into a ball, and roll in your hands.
Place the cookie dough ball into the cinnamon sugar mixture and roll to coat.
Place the cookie dough ball onto the cookie sheet and use the bottom of a glass to push down the cookie dough ball into a 1/4” circle.
Bake at 350°F for 13-15 minutes (do not over bake!).
The tops of the cookies will lose their shine (wet look) in the middle, and that’s when they are ready to be pulled out to cool on a wire rack.
Let cookies cool completely before frosting and garnishing with sprinkles.
