Street Corn Chicken Skillet

1: Toss the bite-size chicken in the olive oil and all of the seasonings.

2: Add seasoned chicken to a skillet on medium high heat and cook nearly all the way through.

3: Pour in the beer, scraping all of the caramelized bits off the bottom of the pan and let reduce for 2-3 minutes while chicken finishes cooking.

4: Take the chicken and juices out of the pan and set to the side.

5: In the same pan, cook the shallot and garlic with a drizzle of olive oil until softened.

6: Add chicken and juices back into the skillet along with the corn, green onion, lime juice, and zest.

7: Let simmer for a few minutes, then remove skillet from heat.

8: Drizzle everything with sour cream and a generous shake of Tajin, and top with Queso Fresco and cilantro.
