A healthier version of the beloved Mcgriddles, these sandwiches consist of egg patties, chicken and maple sausage, and buttermilk pancakes. Easy to make and a hit with kids, they are perfect for breakfast. Just assemble and enjoy with syrup!
Preheat oven to 350°. Grease a half baking sheet with butter or nonstick spray.
Whisk together eggs, milk, salt, and pepper, then pour onto the baking sheet.
Bake for 12-16 minutes until set. Cut out circular egg shapes with a cookie cutter.
For pancakes: whisk together dry ingredients, then add wet, stir until smooth and let rest for 5 minutes.
Pour batter for pancakes on the griddle, matching the size of the cookie cutter for the eggs.
Cook pancakes like usual, set aside to cool.
Assemble sandwiches with a pancake, egg, sausage, and another pancake.
Optionally, dip in syrup and store wrapped in the fridge.
