These Vanilla Pudding Sprinkle Cookies are soft and chewy with the added flavor of vanilla pudding mix. They're packed with colorful rainbow sprinkles, making them a perfect treat for warm weather! Just mix together the ingredients, shape the cookies, and bake until slightly golden.

Instructions

1: Mix together the butter and sugars until fluffy.

2: Add the eggs and vanilla and mix for a good 2 minutes.

3: Add the vanilla pudding mix, baking soda, salt, and flour - mix until just combined.

4: Pour in the sprinkles and stir to distribute throughout the dough.

5: Scoop 1.5 tablespoons of dough onto a baking sheet lined with parchment, fill tray about 8 per tray.

6: Bake at 350°F for 10 minutes, take the trays out and tap tray 3 times to flatten the middle of the cookie out a bit.

7: Back into the oven for 4-6 minutes, until edges are set and tops are barely golden.

8: Let cool on a wire rack. Drizzle with melted white chocolate and top with more sprinkles.
